Spaghetti Squash-How to cook

 

Preheat the oven to 375 degrees.

 

Cut the spaghetti squash in half-lengthwise.

Scrape out the seeds.

Turn upside down on an oiled baking sheet or use parchment paper.

Cook until soft- I test it by poking it with a fork.

45 min. to 1 hour depending on size.

 

Once it’s soft, allow it to cool until you can safely handle it.

 

Use a fork and remove the “meat” of the squash by pulling the fork lengthwise through the squash.

 

If you want to eat it as a fresh salad w/ the eggplant relish- spread out on a tray so it cools faster.

 

If you’re going to use it as hot veg-pasta, serve right away.
