Spaghetti Squash

As with many things in life there are multiple ways to do something. Cooking squash is no exception- let alone the variety of things you can do with this versatile squash. Here are some suggestions to get your ideas flowing.

 

Cooking: While preparing squash, preheat your oven to 400 degrees F. With a very sharp knife, cut off the top along with the stem of the squash. Then, turn it over so that it will stand flat and secure on your cutting board. Carefully cut the squash from the top to the bottom. Then, with a large spoon, scoop out the seeds and the stringy parts.

Option #1: Brush the inside and cut edges with vegetable oil and salt (and pepper, if desired). Lay squash cut side down on a parchment lined baking sheet. Bake for 40 minutes or until it is easily pierced through with a paring knife. Allow to cool for 10-15 minutes. Then, using a fork, scrape out all the spaghetti-like strands. Serve as a side vegetable with butter and salt; or as part of a main dish with a pasta sauce.

Option#2: Cook in Microwave: Place squash cut-sides-down in a microwave-safe baking dish. Fill the dish with about 1 inch of water. Microwave on high for about 12 minutes or until it is easily pierced through with a paring knife. Allow to cool for 10-15 minutes. Then, using a fork, scrape out all the spaghetti-like strands. Serve as desired.

Baking it in the oven takes longer, but, in our opinion, the flavors of the squash develop more than when cooked in the microwave. The squash caramelizes a bit where it makes contact with the baking sheet and caramelization equates to richer flavor.

The benefit of cooking up spaghetti squash in the microwave is, of course, the fact that it’s done in 12 minutes.

What can you do with Cooked Spaghetti Squash?

Spaghetti squash has a lovely mild flavor and therefore yields itself well to other flavors. It’s simply delicious served hot with butter and salt. But is also goes well when served with pasta sauce, pesto, or even an alfredo sauce. It also severs up nicely with spicy main dishes. It is great added to the layers of lasagna or a casserole. Also it is great over cooked noodles! However you decide to eat this delectable squash, we are sure you will enjoy it.
